Pumpkin Pancakes!

Halloween is just around the corner, try pumpkin pancakes to start off any October day.  They are a healthy and a delicious way to enjoy the season without derailing it.  We found this recipe online at www.recipezaar.com.  Check out the website for more great recipes!

Servings 16
Ingredients:
2 cups whole wheat flour
2 tbs brown sugar
2 1/2 tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp all-spice
½ tsp ginger
2 cups nonfat milk
1 tsp vanilla
3 tbs olive oil
1 can canned pumpkin

Directions:
Mix all dry ingredients
Mix all wet ingredients in with the dry ingredients until there are no clumps.
Cook on medium heat until the edges look dry, then flip.
These pancakes will be dense and thick; this is how they are supposed to turn out.
Of course they will be super delicious with WARM maple syrup!
