Sweet Potato Red Lentil Quinoa Chili

I had to combine 2 recipes because I didn't have all the ingredients to make one.
Sweet Potato Red Lentil & Quinoa Chili.. so good!
Ingredients:
1 large onions,
5 cloves garlic minced,
large sweet Potato diced (it's low glycemic & higher in potassium than bananas).. sautee in large pot.
Add 7 cups of veggie broth,
2 cans of organic fire roasted tomatoes,
1 small can of tomato paste,
4 TBL Apple Cider Vinegar then boil.
Add 1/2 a pound of dried red lentils &
1/2 cup quinoa,
1.5 Tbl oregano,
1.5 Tbl dried parsley,
1/2 tsp chipotle pepper,
2 tsp paprika,
1/4tsp red pepper flakes,
1 Tbl chili powder,
2 TBLS maple syrup.
Boil then lower temp and cover until beans & quinoa are done.
Stir occasionally so the bottom doesn't burn.
Top with scallions & parmesan (nutritional yeast/almond meal)
I had a bowl sprinkled with dried unsweetened coconut flakes & both were good.. different flavor. #vegan #chili
